  • 1 block medium-firm tofu (momen dofu) ((14 oz, 397 g; or use silken tofu))
  • 2 g reen onions/scallions
  • 2 inches daikon radish
  • 1 tsp ginger ((grated))
  • 1 cup dashi (Japanese soup stock)
  • 2 Tbsp soy sauce
  • 2 Tbsp mirin
  • 2 cups neutral oil ((enough for 1 inch (2.5 cm) of oil in the pot))
  • 4 Tbsp potato starch or cornstarch
  • 1 package katsuobushi (dried bonito flakes) ((optional; skip for vegetarian))
  • shichimi togarashi (Japanese seven spice) ((optional, for a spicy kick))
