  • 1/2 tablespoon smoked paprika
  • 1/4 teaspoon crushed red pepper (optional)
  • 4 ears fresh corn (kernels cut off)
  • 1 medium potato (peeled and diced small)
  • 1 cup cream or whole milk
  • 3 -4 cups chicken stock (or veggie stock)

  • chopped green onions (fresh cilantro and blue cheese crumbles, for serving (optional))
