  • toppings of your choice ((try ikura (salmon roe) or yuzu-flavored tobiko (flying fish roe); optional))
  • ⅓ cup rice vinegar (unseasoned)
  • 3 Tbsp sugar
  • 1½ tsp Diamond Crystal kosher salt
