• 8 medium corn tortillas (7-inch, or 50/50 corn & wheat tortillas)
• 1 ¾ cups enchilada sauce
• 2 cups shredded pepper jack cheese (8 oz)
• 1 tablespoon olive oil
• ¼ cup finely chopped onion
• 1 clove minced garlic
• 1 teaspoon chili powder
• 2 cups cooked shredded chicken
• 4 ounces canned mild green chiles (drained)
