Koboi Queso

- 1 pound mild sausage
- 1 teaspoon chili powder
- 1 teaspoon onion powder
- 1 cup pale ale beer
- 10 ounces Rotel tomatoes with green chilies, (drained)
- 16 ounces Velveeta cheese
- 2 cups Monterey jack cheese (shredded)
- 1 can black beans, (drained and rinsed)
- 1 cup corn, (canned or frozen)
- cilantro, tomatoes, and jalapenos, (for serving)
- tortilla chips, (for serving)

In a large cast iron skillet, add 1 pound mild sausage. Cook and crumble over medium-high heat until no longer pink. Drain any grease once cooked through.
Stir in 1 teaspoon chili powder, 1 teaspoon onion powder, and 1 cup pale ale beer. Allow the beer to cook and reduce for about 4-5 minutes.
Add in 16 ounces Velveeta cheese and 2 cups Monterey jack cheese. Reduce the heat to medium and melt the cheese, stirring occasionally.
Once the cheese is melted, stir in 1 can black beans,1 cup corn, and 10 ounces Rotel tomatoes with green chilies, and heat through for about 5 minutes.
Garnish with chopped cilantro, tomatoes, and jalapenos,.
