Crispy Wonton Rotisserie Chicken Salad

- 1/4 cup toasted sesame oil
- 2 tablespoons honey
- 2 tablespoons orange or apricot jam
- 1/3 cup freshly squeezed orange juice
- 1 tablespoon orange zest
- 3 tablespoons rice vinegar
- 2 teaspoons freshly grated ginger
- 1 -2 cloves garlic, grated
- 1/2 teaspoon ground turmeric
- 2 tablespoons sesame seeds
- 4 cups shredded cabbage/kale
- 2 cups cooked shredded rotisserie chicken
- 1 cup chopped cilantro/Thai basil
- 2 jalapeños, seeded if desired and chopped
- 2 avocados, sliced
- 1/3 cup roasted salted cashews, chopped
- 1/3 cup chopped green onions
- 2 cups crispy wontons ((store bought or see notes for directions) )

1. To make the dressing. Combine all ingredients in a glass jar. Whisk to combine. Season with salt and pepper. 2. To make the salad. In a salad bowl, combine the cabbage, chicken, herbs, and jalapeños. Pour over half the dressing, then toss to coat the greens.3. Add the avocados, cashews, green onions, and fried wontons. Pour over the remaining dressing. ENJOY the yumminess!
