  • ⅓ oz katsuobushi (dried bonito flakes)
  • ½ oz reserved kombu
  • 1 Tbsp aonori seaweed
  • 3 Tbsp toasted white sesame seeds
  • 1 Tbsp toasted black sesame seeds
  • 1 tsp sugar ((plus more to taste))
  • ½ tsp Diamond Crystal kosher salt ((plus more to taste))
  • 1 tsp mirin
  • 1 tsp soy sauce
  • ½ tsp toasted sesame oil
  • ½ sheet nori seaweed
  • 1 tsp aonori seaweed ((optional; I added extra aonori for more color))
