  • 10 oz cherry tomatoes (halved (1 ½ cups))
  • 1 bell pepper (any color, seeded and chopped )
  • 1 small red onion (chopped (⅓ cup chopped))
  • 4 oz crumbled feta (1 cup)
  • ½ cup pitted Kalamata olives (or added to taste, halved or coarsely chopped, plus 1 Tbsp of juice from the jar)
  • ¼ cup parsley (finely chopped)
  • ⅓ cup red wine vinegar
  • 1 tsp dried oregano
  • 3 g arlic cloves (grated or minced)
  • 1 tsp fine sea salt (or added to taste)
  • ½ tsp freshly ground black pepper
  • ½ to ⅔ cup extra virgin olive oil
