  • 1 and 1/2 cups water
  • 1 teaspoon kosher salt
  • 2 tablespoons granulated sugar
  • 1/3 cup rice vinegar
  • 3/4 cup mayonnaise
  • 1 tablespoon sriracha (or your favorite hot sauce (add more to taste))
  • 2 teaspoons rice vinegar (or more to taste)
  • 2 English cucumbers
  • 10 ounces edamame (I use two 5-ounce frozen packs)
  • 2 large avocados
  • 1/2 cup green onions (sliced thin)
  • 1/2 cup cilantro (chopped)
  • 2 tablespoons black sesame seeds
  • 2 tablespoons rice seasoning
