  • 1 ½ cups orzo (uncooked)
  • 6 ounces marinated artichoke hearts (juices reserved)
  • ½ English cucumber (diced)
  • 1 pint grape tomatoes (halved)
  • ½ cup kalamata olives (sliced and pitted)
  • ⅓ cup crumbled feta cheese
  • ⅓ cup diced red onion
  • ½ cup Greek dressing (or to taste)
  • chopped fresh parsley (for garnish)

  1. Cook orzo in salted water according to package directions.

  2. Drain artichoke hearts reserving liquid for the dressing. Chop artichokes and slice remaining vegetables.

  3. Combine all ingredients in a large bowl.

  4. Combine 2 tablespoons of the artichoke marinade with Greek dressing. Toss with remaining ingredients (or make the homemade dressing recipe below).

  5. Refrigerate at least 2 hours before serving.
