  • 1/2 a red onion (chopped)
  • 1 small red pepper (diced)
  • 1 jalapeño (seeded + diced)
  • 1/2 cup apple cider vinegar
  • 1/4 -1/3 cup honey (I used closer to 1/3 cup)
  • 1/4 teaspoon salt + pepper
  • pinch of cayenne
  • 2 tablespoons fresh cilantro (chopped)
  • 1 1/2 cups feta cheese (crumbled)
  • 4 tablespoons olive oil
  • 2 tablespoons fresh cilantro or mint (I used a mix)
  • 2 tablespoon salted pistachios (chopped)
  • pinch of crushed red pepper
