  • 6 tbsp good quality Dijon mustard (I like Maille Dijon Originale)
  • 1 cup whole wheat panko
  • 1/4 cup freshly grated Parmesan cheese
  • 1 tbsp olive oil
  • minced parsley for serving (optional)
