  • 4 hard-boiled egg
  • 2½ cups dashi (Japanese soup stock)
  • 2½ cups Homemade Oxtail Broth
  • 2 Tbsp mirin
  • 2 Tbsp soy sauce
  • ½ tsp Diamond Crystal kosher salt
  • 1 tsp sugar
  • 2 tsp Japanese karashi hot mustard
  • 1 Tbsp hot water
