  • 1¼ cups water ((can sub coconut milk))
  • ¼ cup creamy peanut butter
  • ¼ cup low sodium soy sauce
  • 2 tablespoons packed brown sugar
  • 1 tablespoon cornstarch
  • ½ teaspoon crushed red pepper
  • 2 cups chopped cooked chicken ((can use shredded rotisserie chicken))
  • One 8-ounce can sliced water chestnuts, (drained)
  • One 8-ounce can bamboo shoots, (drained)
  • ¼ cup chopped unsalted roasted peanuts
  • ¼ cup thinly sliced green onions
