  • 2 large handfuls fresh baby arugula
  • 1 batch roasted cauliflower (see below)
  • 1 cup Kalamata olives, pitted and halved
  • 2/3 cup roughy-chopped sun-dried tomatoes
  • 1/2 cup crumbled feta or goat cheese
  • 1/2 cup toasted pine nuts
  • half a small red onion, thinly sliced
  • 1 batch lemon vinaigrette (see below)
  • 1 head cauliflower
  • 1 tablespoon olive oil
  • Kosher salt and freshly-cracked black pepper
  • 1/4 cup olive oil
  • 3 tablespoons freshly-squeezed lemon juice
  • 3 tablespoons finely-chopped fresh parsley leaves
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon freshly-cracked black pepper
