  • 1 pound boneless skinless chicken thighs or breasts, thinly sliced
  • 1/2 cup low sodium soy sauce or tamari
  • 1 tablespoon fish sauce
  • 2 -3 tablespoons Thai red curry paste
  • 1 tablespoon ketchup
  • 4 cloves garlic, minced or grated
  • 1 inch fresh ginger, grated
  • 1 zucchini or yellow summer squash, thinly sliced
  • 2 red or orange bell peppers, thinly sliced
  • 1 cup fresh Thai or regular basil, roughly torn
  • 1/3 cup fresh cilantro, roughly chopped
