  • 2 cups dashi (Japanese soup stock)
  • 1½ Tbsp sugar
  • 2 Tbsp soy sauce
  • 2 Tbsp mirin
  • 1 pinch Diamond Crystal kosher salt ((if needed; I didn't use it this time))
