- 1 pound cubed boneless skinless chicken breasts, (1-inch cubes)
- 2 teaspoons minced garlic, (2 cloves)
- ⅔ cup peanut butter
- 1 cup chicken broth
- 1 cup shredded zucchini
- ⅓ cup soy sauce
- 1 teaspoon sugar
- 1 slice d red pepper
- 1 tablespoon lime juice
- ½ cup chopped cilantro, (more for garnish)
- chopped peanuts (for garnish)
- 12 ounces cooked and drained linguine noodles

Add 1 pound cubed boneless skinless chicken breasts, 2 teaspoons minced garlic, ⅔ cup peanut butter, 1 cup chicken broth, 1 cup shredded zucchini, ⅓ cup soy sauce, 1 teaspoon sugar, and 1 sliced red pepper into the slow cooker. Stir to combine.
Cook on LOW for 4-5 hours or on HIGH for 2-3 hours. 30 minutes before serving, add 1 tablespoon lime juice and ½ cup chopped cilantro, then cook for the remaining 30 minutes.
Serve over 12 ounces cooked and drained linguine noodles and garnish with chopped peanuts and chopped cilantro.
