  • ⅔ cup peanut butter
  • 1 cup chicken broth
  • 1 cup shredded zucchini
  • ⅓ cup soy sauce
  • 1 teaspoon sugar
  • 1 slice d red pepper
  • 1 tablespoon lime juice
  • ½ cup chopped cilantro, (more for garnish)
  • chopped peanuts (for garnish)
  • 12 ounces cooked and drained linguine noodles

  1. Add 1 pound cubed boneless skinless chicken breasts, 2 teaspoons minced garlic, ⅔ cup peanut butter, 1 cup chicken broth, 1 cup shredded zucchini, ⅓ cup soy sauce, 1 teaspoon sugar, and 1 sliced red pepper into the slow cooker. Stir to combine.

  2. Cook on LOW for 4-5 hours or on HIGH for 2-3 hours. 30 minutes before serving, add 1 tablespoon lime juice and ½ cup chopped cilantro, then cook for the remaining 30 minutes.

  3. Serve over 12 ounces cooked and drained linguine noodles and garnish with chopped peanuts and chopped cilantro.
