• ½ cup freshly squeezed lemon juice ((about 4 medium lemons))
• ¼ cup Dijon mustard
• 2 tablespoons extra virgin olive oil
• 2 tablespoons chopped fresh herbs ((oregano or thyme, or both!))
• 2 tablespoons honey
• 2 tablespoons apple cider vinegar
• 1 tablespoon packed light brown sugar
• 1 medium garlic clove, (minced)
• 1 teaspoon salt
• ½ teaspoon freshly ground black pepper
