  • 1/3 cup plus 1 tablespoon nonfat plain Greek yogurt
  • 1/4 cup finely chopped cornichons or small dill pickles
  • 3 tablespoons finely chopped red onion
  • 2 teaspoons freshly squeezed lemon juice
  • 1 teaspoon grainy mustard
  • 1 tablespoon minced fresh parsley or dill
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • 6 slices bread (I like whole grain sourdough)
  • 3 slices sharp cheddar cheese
  • 3 tablespoons softened unsalted butter
