  • 800 g / 28 oz canned crushed tomato
  • 2 cups (500 ml) vegetable or chicken broth
  • 1 zucchini (, diced (~1 cup) *)
  • 2 cups sweet potato * (, 1.5cm / 3/5" cubes (~225g/7.5oz))
  • 2 cups cauliflower florets * (, small / medium (~180g/6oz))
  • 3/4 cup frozen peas *
  • 2 handfuls baby spinach (, optional (Note 2))
