- 1 cup brown sugar
- 2 teaspoons cinnamon
- 2 teaspoons baking powder
- ½ teaspoon salt
- 2 eggs
- 1 ½ cups milk (or almond/oat milk)
- ⅓ cup butter (melted)
- 1 teaspoon vanilla extract
- 2 tablespoons brown sugar
- 2 tablespoons old fashioned oats
- 1 tablespoon butter (softened)

Preheat oven to 350°F.

Combine the topping ingredients in a small bowl. Mix well and set aside.

In a large bowl combine oats, brown sugar, cinnamon, baking powder, and salt. Add in eggs, milk, butter, and vanilla extract. Mix well and spread in a greased 9×9 pan.

Sprinkle topping over oatmeal and bake 40–45 minutes.

Serve warm, drizzled with cream if desired.
