- 1 (9-inch) pie crust, (homemade or store-bought)
- 1 ½ cups granulated sugar
- ¼ teaspoon salt
- 3 tablespoons all-purpose flour
- 2 teaspoons lemon zest
- 4 large eggs
- 1 cup buttermilk
- 1 tablespoon fresh lemon juice
- ½ cup unsalted butter, (melted and cooled)
- 1 ½ teaspoons vanilla extract

Preheat the oven to 350 degrees Fahrenheit and press the 1 (9-inch) pie crust, into a 9-inch pie pan. Chill the crust in the refrigerator while you prepare the filling.

In a large bowl, whisk together 1 ½ cups granulated sugar, ¼ teaspoon salt, 3 tablespoons all-purpose flour, and 2 teaspoons lemon zest.

Whisk in 4 large eggs until fully combined. Whisk in 1 cup buttermilk, 1 tablespoon fresh lemon juice, ½ cup unsalted butter, and 1 ½ teaspoons vanilla extract. Pour into the chilled pie crust.

Bake for 50-55 minutes or until the filling has set and only has a slight wobble to it. Let it cool completely before serving.
