  • 3 large ripe tomatoes (chopped)
  • 8 ounces mozzarella balls (or fresh mozzarella, chopped)
  • 10 medium fresh basil leaves (thinly sliced)
  • 2 cloves garlic ( divided)
  • 2 tablespoons chopped fresh parsley (chopped)
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons red wine vinegar
  • salt and black pepper
  • 1 baguette ( or Italian bread, sliced 1-inch thick)
