  • ½ avocado (sliced)
  • ¼ cup halved cherry tomatoes
  • ¼ cup diced bell pepper (any color)
  • ¼ cup cooked and crumbled bacon (or breakfast sausage)
  • 1 teaspoon everything bagel seasoning
  • hot sauce (or chili oil for drizzling, optional)
  • chopped fresh chives (for garnish)

  1. Fill a small saucepan with water and bring to a gentle simmer. Lower the egg in carefully and simmer for 7 minutes. Transfer to a bowl of ice water and chill for 2 to 3 minutes before peeling.

  2. While the egg is chilling, add cottage cheese to a serving bowl and spread slightly with a spoon.
