  • 2 tbsp olive oil
  • 2 lb / 1 kg fillet paha ayam (, tulang dan kulit (4 sampai 5 potong) (lihat catatan))
  • 1 tsp bubuk jintan
  • 1 tsp bubuk kayu manis
  • 1 tsp garam
  • Lada hitam
  • 1 1/2 tbsp fresh ginger (, finely chopped)
  • 3 g arlic cloves (, minced)
  • 1 bawang bombay (, dibelah dua dan diiris halus)
  • 2 birds eye chilis (, finely chopped (or to taste) (see notes))
  • 1/4 cup (gabungan) daun mint dan ketumbar, cincang kasar
  • 2 tbsp air jeruk
  • 14 oz / 400 g canned crushed tomato
  • 1 cup kaldu ayam/kaldu
  • 1/8 tsp saffron powder ((see notes))
  • 1/2 tsp bubuk jintan
  • 3 sprigs of thyme or 1 tsp dried thyme leaves
  • 1/4 cup dried currants or sultanas ((optional) (see notes))
  • 8 oz / 250 g giant couscous ((Israeli or Pearl Couscous))
