  • 1 lime (juiced)
  • 1/3 cup red onion (minced)
  • 1 small garlic clove (mashed or minced)
  • 1 tbsp fresh cilantro (chopped)
  • kosher salt and fresh pepper (to taste)
  • optional: diced tomato and jalapeño
