  • 2½ tablespoons honey
  • 1 tablespoon olive oil
  • ½ teaspoon grated lemon zest
  • 16 boneless, skinless chicken thighs ((about 3 pounds))
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
