  • 4 small delicata squash (about 2 pounds)
  • 2 tablespoons olive oil
  • 1 clove garlic (minced)
  • ½ teaspoon kosher salt (or to taste)
  • ¼ teaspoon black pepper (or to taste)
  • ⅛ teaspoon ground sage (or poultry seasoning)
