  • 1/4 cup extra virgin olive oil
  • 2 teaspoons smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon chipotle chili powder

  • 1 teaspoon onion powder

  • 4 tablespoons salted butter
  • 3 -4 cloves garlic, chopped
  • 1 can full fat coconut milk
  • 2 -3 tablespoons Thai red curry paste
  • 2 tablespoons tamari or soy sauce
  • 1 1/2 cups diced mango
  • 1 avocado, cubed
  • 1 -2 jalapeños, seeded, if desired, and chopped
  • 1 shallot, chopped
  • 1/2 cup cilantro, chopped
  • 1/2 cup basil, chopped
  • 1 tablespoon lime zest, plus 1/4 cup lime juice
  • 1 teaspoon honey

  1. 1. Preheat the oven to 500° F or high broil.2. On a baking sheet, toss the salmon with olive oil, paprika, chili powder, chipotle chili powder, garlic powder, onion powder, and a pinch of salt. If desired, thread the salmon onto skewers. Arrange in a single layer. Broil until the salmon begins to crisp, 5-8 minutes, watch closely.3. In a large skillet over medium heat, melt together the butter, garlic, and curry paste. Cook for 2-3 minutes until very fragrant. Add the coconut milk and tamari. Mix in a handful of chopped cilantro and or basil. 4. To make the salsa, combine all ingredients in a bowl.5. Serve the salmon and curry sauce over bowls of rice. Top with salsa.
